In 2013 the prof. Fernanda Matias began to have contact with beekeeping in RN. At that time, he heard reports from family beekeepers about dark honey that people didn't buy because they thought it was of low quality. Affectionately called black honey, Dr Fernanda began developing meads to add value to the region's honey chain. At the same time, after seven years of using and studying probiotics, he began research into shelf life and new ways to stabilize kombucha. With this, he developed an exclusive culture that could be a natural preservative for drinks. In 2020, biohacking studies began, resulting in a functional kombucha with a 12-month shelf life without refrigeration.
Our kombuchas are unique and I can prove it! Our microbial culture has 96% unidentified bacteria and we map the genome of both bacteria and yeast to control the quality of the drink. This means that our kombuchas can be left unrefrigerated for at least 2 months. With the knowledge and studies carried out with kombucha since 2013, we were able to create functional drinks that can remain unrefrigerated for 12 months. Our kombuchas are less acidic to the taste and sweeter as they contain a high content of acids structurally derived from sugar.
Did you know that 85% of cashews are discarded after the nuts are harvested? One of our partners discards more than 400 loads of cashews a year because there is no use for this pseudo-fruit in the processing industry. Therefore, we combine the traditional knowledge of the region to propose new products for you. Our first product in the line is cashew syrup, with a shelf life of 12 months. Plus, it's vegan. Using exclusive black honey from the caatinga, Yra mead has a more intense flavor due to the presence of propolis in the composition. We have the only Bouchet mead without caramelizing the honey.
